So our friend Gavin is graduating today! He has put in a lot of hard work, but he refuses to let anyone get him any presents. (seriously REFUSES) So instead we decided to surprise him last night and take him lot's of balloons (thanks Eric) and these cream filled strawberries. Congrats on graduating Gav, we love you!
I got this recipe from my aunt Kim (she is quite the gourmet). They turned out so pretty but most important... yummy! Here's whatcha do...
wash and core strawberries...
make the filling...
squeeze filling in strawberries, refrigerate, and drizzle chocolate...

Recipe:
8 oz. cream cheese
1 cup powdered sugar
2 cups cool whip
1 cup chocolate chips melted (my aunt used a giant milk chocolate candy bar, and I used semi-sweet chips)
3 cartons strawberries (I only used two and had lots of filling and chocolate left over)
-Wash and core strawberries (this is what takes the longest, the rest is a breeze)
-mix softened cream cheese & powdered sugar
-fold in cool whip
-put mixture into pastry bag or ziploc (if using ziploc snip off corner)
-fill each strawberry (after this step I put them in fridge so the filling could harden just a bit)
-put melted chocolate in ziploc and snip very small hole in corner.
-drizzle choc. over strawberries.
ENJOY! (refrigerate leftovers)
(p.s. I am using my leftover filling to dip other fruit in and it's really good too.)

Ooh, I have had those strawberries before. They are so, so good. Plus they are healthy (anything with fruit in it qualifies as healthy!).
